zucchini ribbons in 15min

as it is the beginning of the week i have checked what kind of leftovers still remain in my fridge. as you can imagine my student fridge didn’t include a lot of products. but there was some salad, zucchini and few other ingredients.

that is why i thought i should make quick and easy salad with zucchini ribbons.

 

you will need:

– 1 big zucchini

– salad (you can use: spinach, watercress or rocket)

– feta or goat cheese

– a bunch of roasted nuts (you can use: almonds, hazelnuts, pine nuts or walnuts)

– 2 table spoons of olive oil

– balsamic glaze (decoration)

– salt/pepper

preparation:

cut zucchini with a vegetable peeler into lengthwise strips. coat them with a bit of oil and salt. grill them in oven for about 10min (till they will become a bit ‘brownish’). at the same time place nuts on a tray and roast them for about 5-7min. during that time place salad and selected cheese on the plate. then add cooled zucchini ribbons. sprinkle everything with crushed roasted nuts. you can also add some salt and pepper. decorate with balsamic glaze. enjoy!
