things you need to grab:
– 120g of rice/couscous/millet groats/ barley
-1 large zucchini
– 1 eggplant
– 1 red paprika
– 1/4 onion (chopped)
– 1 clove of garlic (chopped)
– 1 chili paprika (chopped)
– tomato sauce
cook couscous/rice. during that time fry onion, garlic and chili on the pan. add chopped vegetables and stir everything together. leave it on low heat for about 5-7min. mix prepared couscous/rice with tomato sauce and season it with favorite herbs (you can use basil, chili, rosemary). then add cooked vegetables and stir it all together. leave on a low heat for few minutes till all flavors will unite together.
ready meal sprinkle with chopped mozzarella and mix it all together so the cheese will melt and become ‘chewy’
