traveling in London can often make your head spin. especially if you’re tired, or have one of these days when you build castles in the air. today I had one of these days…that is why I had ONLY lose my way twice, take the bus in an opposite direction and get stuck in traffic for 40min. you can imagine how starving I was when I’ve crossed threshold of the house. luckily me and my flat mate came up with quick and easy meal using only ingredients we had at that time in the fridge. it took as less then 30min. above you can find out what we have prepared and do it yourself.
you will need:
– 1/2 of red onion
– 1 clove of garlic
– 2 chicken breasts
– tikka masala sause
– pinch of chilli powder, salt, pepper, cumin and thyme
– 125g of couscous/millet/rice (you can also use ready one – ‘Tilda’)
cook couscous, rice or whatever you feel like in a pot. at the same time fry onion and garlic in a pan. then add chopped chicken breasts (you can marinate it before in selection of favorite herbs). you can also add sliced vegetables like paprika, zucchini or eggplant. fry everything for about 5min. next add the sauce and mix it all together. if you prefer spicy food I suggest adding hot sauce. place cooked couscous/rice on a plate and put prepared chicken on top. enjoy!
